If you missed my earlier post about some tricks I use for saving my student pennies, found here, than you might not have heard of one of my favorite websites Supercook! To use this great site, you simply log in and plug in all the foods you have in your fridge/freezer/pantry. The site then searches the internet and bring back recipe’s using only ingredients you already have on hand. It’s a great place to find inspiration for using your every day ingredients in ways you hadn’t thought of before.
Supercook has just started a really great new feature, called the Supercook Challenge. Every week, they will give you specific challenge ingredients that you must use in a dish that represents that week’s challenge theme. If you are familiar at all with the show “Chopped” on the Food Network, it is a lot like that. The winning dish will be chosen by a criteria based on creativity, skill and personal touch. The second place winner will win a $100 grocery gift card, while the first place winner will win a $200 grocery gift and the title of Supercook.
This week’s Supercook Challenge theme is “Back to Work” and the ingredients are tomato’s, chicken and rice. My entry into the challenge, shown above, is a dish called “Miracle Whip Chicken Skillet“. I found the dish on the Kraft website. This dish was fantastic and my boyfriend and I are definitely looking forward to when I make it again. I feel that this dish really captures the theme “Back to Work”, because this time of year everything gets a little bit hectic. With back-to-school, back-to-work and back-to-everything else, sometimes when you get home you are just all burnt out! This is a super easy and delicious dish that can be thrown all together in one pot (less dishes to wash) and just left to cook. I personally loved the cheese baked onto the top of the dish, because I always feel that no dish is complete until you add cheese!
