Sweet Potato Lentil Soup


This recipe is my favourite type of recipe, it’s easy! Just spend a few minutes chopping, throw it in your slow-cooker and you have yourself a recipe for Sweet Potato Lentil Soup. It’s packed full of healthy and yummy veggies, making it perfect for these cold evenings! I recommend drizzling olive oil and sprinkling cheese on top, and then hopping under a blanket to enjoy your delicious bowl of steamy soup.


2 tablespoons olive oil

1 large onion, chopped

3 cloves garlic, minced

1 large carrot, peeled and chopped

1 large sweet potato, peeled and cut into cubes

8 cups chicken broth

2 cups dried lentils

1 can (14.5 ounces) diced tomatoes

1 teaspoon dried oregano leaves, crushed

1 teaspoon salt

1/4 teaspoon ground black pepper

1 can (about 15 ounces) chickpeas (garbanzo beans) un-drained


  1. Heat oil in skillet. Add onion and garlic; cook uncovered 5 minutes or until onion is tender, stirring occasionally
  2. Stir onion/garlic mixture, carrots, sweet potato, broth, lentils, tomatoes, oregano, salt and black pepper into slow-cooker. Set to LOW; cover and cook for 7 hours, or until vegetables are tender. Stir in chickpeas during last 30 minutes of cooking time
