“Miss” Mickey’s Peanut Butter Balls

This is a SUPER easy recipe for some delicious and sweet peanut butter balls, from country singer Trisha Yearwood’s cookbook “Home Cooking“.  I made them at Christmas for all my co-workers, using the Christmas red and green Rice Krispies to make them even more festive. They can last up to 2 weeks, but I can guarantee you won’t have them that long! The bowl was sitting in the staff room for all of 10 minutes before they were already half-way gone. They are an easy no-bake little treat to whip up when you have a sweet-tooth craving. They are seriously delicious and you won’t be able to stop with just one!

1 cup sugar

1/2 cup dark corn syrup

1/2 cup white corn syrup

2 cups crunchy peanut butter

4 cups Rice Krispies

  1. In a large saucepan, stir the sugar and the syrups together over medium heat. Add the peanut butter and continue to stir until the mixture is fully combined
  2. Remove the pan from the heat, and add the Rice Krispies. Mix well
  3. Spray your hands lightly with cooking spray and shape the mixture into balls. Transfer to waxed paper
  4. Store in an airtight container for up to 2 weeks
