It finally feels like spring! Today has been one of the first days that I have had off work, where it has finally been warm enough outside to open up my windows and let in the fresh air. I am so happy that winter has finally given up and let us enjoy spring. After all it’s April showers bring May flowers, not April snowstorms!
One warm weather treat I always enjoy is fruit, I am such a fan of fruit of all kinds. Here is a recipe for a super yummy and very easy version of peach cobbler. The original recipe called for a topping of crushed cookies, but I opted for a healthier twist and added granola instead. This is a bright and colourful treat you can whip up for yourself to get yourself in the mood for springtime!
4 bags (16 ounces each) frozen sliced peaches, thawed and drained, juice reserved
2 tablespoons cornstarch
1/2 cup sugar
2 teaspoons almond extract
3 cups granola or chopped almonds
Sweetened whipped cream
- Preheat oven to 325F. Stir reserved peach juice and cornstarch in dish. Add peaches, sugar and almond extract and stir to coat. Cover and bake for 30 min or until peaches are tender
- Let peach mixture cool in pot 5 minutes. Sprinkle with granola or chopped almonds. Serve with whipped cream
