Savoury Potato, Mushroom & Leek Pizza

Here is a recipe for a super hearty and tasty take on pizza; Potato, Mushroom and Leek Pizza. I love potato’s, mushrooms and cheese, so I figured this would be the perfect dish for me! I was very excited about getting to use rosemary picked fresh out of my little “mini garden” out on the front porch. I just finished planting it on the weekend and have been itching for an opportunity to harvest something out of it. And a nice bonus is that this dish is not only just delicious, but nutritious as well! Leeks and garlic are packed with super good for you prebiotics, which encourage the growth of good bacteria in the intestine. So you can feel good about chowing down on this great pizza!

Ingredients

3 tbsp. (45 ml) olive oilimg_20160528_213355.jpg

5 cloves garlic, thinly sliced

2 cups (500 ml) sliced mushrooms

1 cup (250 ml) sliced leeks (white and pale green part only)

2 tbsp. (25 ml) chopped fresh rosemary

3/4 tsp (4 ml) salt

1/2 tsp (2 ml) pepper

4 potatoes, scrubbed and thinly sliced (about 3 cups/750 ml)

1 lb (500 g) prepared pizza dough or unbaked pizza shell

2 tbsp. (25 ml) grated Parmesan cheese

1/2 cup (125 ml) each shredded Cheddar and mozzarella cheese

Directions

  1. In a large skillet, heat oil over medium-low heat; cook garlic, mushrooms, leeks, rosemary, salt and pepper, stirring, for 6 to 8 minutes or until mushrooms have released their liquid and leeks are tender. Toss potatoes in leek mixture to coat
  2. Press dough onto 12-inch (30 cm) pizza pan; sprinkle with Parmesan cheese
  3. Top with potato mixture in overlapping concentric circles. Sprinkle with Cheddar and mozzarella cheese. Bake in 450F (230C) oven for 20 to 30 minutes or until crust is crisp and potatoes are tender
